The offensive GB's will boost both stats on units in your attack armies, the defensive GB's will boost both stats on units in your defense armies (the buildings like Monastery and Watchfires boost ONLY the defense stat of your defense armies).Found this very nice guide on the US version of FOE. The two sets of GB's boost both Attack and Defense stats but for different units. It is impossible to have different % boosts for your attacking army. Lets say you have a 72% bonus from them this means the unit will have 72%/72% Attack/Defense stats. Unit selected in attack (in currently selected army box), it will gain it's attack/defense boost from your Statue of Zeus, Cathedral of Aachen and Castel del Monte. This adds 60% to defense meaning this unit in defense has a total buff og 45%/105% Attack/Defense. Lets say you have 45% bonus from your 2 GB's this means this unit will have 45%/45% Attack/Defense, Then we must add on Monastery and watchfire (which ONLY buff defense stats), lets say you have 1 Monastery and 10 Watchfires. Unit selected in defense (with a blue box), it will gain it's attack/defense boost from your Saint Basil's Cathedral and Deal Castle plus the Monastery and Watchfire.
